EPUB is the open standard for ebooks, and it's simpler than most people assume. Rename an .epub to .zip, unpack it, and you'll find HTML files, a CSS stylesheet, an images folder, and an XML manifest listing the reading order. It's a small offline website in a box.
The defining feature is reflowable text. EPUB doesn't have pages. Text flows into whatever space the reader gives it, so bumping the font size on your phone reflows the whole book around your choice. There's no "page 47" — there's just a position in a continuous stream.
DOCX is the format Microsoft Word has used since 2007. Like EPUB, it's a ZIP archive of XML files — which is exactly why converting between them works as well as it does. Both formats describe documents structurally rather than as fixed page images.
